Fried Crunchy Onion Rings

1 large white onion

1 cup all purpose white flour

1 tsp. baking powder

1/2 tsp. salt

3 eggs

1/2 cup whole or 2% milk

2 1/2 cups panko bread crumbs

3 cups vegetable oil

*Combine flour, baking powder and salt in one bowl.  Whisk eggs and milk in a separate bowl. Combine and whisk both mixtures into one bowl.  Pour panko bread crumbs into shallow bowl. Cut white onion into 1/2 inch rings. Dip onion ring into batter and then into panko crumbs. Coat generously. Drop onion rings into hot oil (375 degrees). Turn onion ring when side is golden brown. Remove when both sides are golden brown and place onto wire grate. Place onto napkins to absorb excess oil.

Eat with your favorite dipping sauce.

To freeze extra onion rings, place onion rings on cookie sheet and place in freezer for 30-45 minutes. When froze transfer onion rings to freezer storage bags. Keeps up to 3 months in freezer.
