CRANBERRY BREAD
2 cups of flour (you can use white or wheat)
1/2 cup sugar (original recipe calls for 1 cup)
2 tsp. baking powder
1/2 tsp. soda
1 tsp. salt (you may use less)
2 tsp finely grated orange rind
1/3 cup juice from orange
1/2 cup water
1 egg well-beaten
2 tbsp melted butter
1 cup chopped walnuts
1 cup raw cranberries cut in half
Sift together flour, sugar, baking powder, soda and salt in a large bowl. Combine orange rind, orange juice, water, egg and butter. Add all at once to dry ingredients. Stir just until thoroughly moistened. Stir in nuts and cranberries. Pour batter into greased 9"x 5" x 3" loaf pan.
Bake at 350 degrees for 50-60 minutes. Cool thoroughly before slicing.
