Cranberry Bread - CLICK FOR FULL RECIPE!

CRANBERRY BREAD 2 cups of flour (you can use white or wheat) 1/2 cup sugar (original recipe calls for 1 cup) 2 tsp. baking powder 1/2 tsp. soda 1 tsp. salt (you may use less) 2 tsp finely grated orange rind 1/3 cup juice from orange 1/2 cup water 1 egg well-beaten 2 tbsp melted butter 1 cup chopped walnuts 1 cup raw cranberries cut in half Sift together flour, sugar, baking powder, soda and salt in a large bowl. Combine orange rind, orange juice, water, egg and butter. Add all at once to dry ingredients. Stir just until thoroughly moistened. Stir in nuts and cranberries. Pour batter into greased 9"x 5" x 3" loaf pan. Bake at 350 degrees for 50-60 minutes. Cool thoroughly before slicing.

Italian Meatballs - CLICK FOR FULL RECIPE!

Italian Meatballs Great for spaghetti sauce and sandwiches! 3/4 lb. ground beef (I use 85%) 1/4 lb. ground pork 1 cup fine bread crumbs (ok to substitute with Italian bread crumbs) 1/2 cup grated Parmesan cheese 1 tbsp. minced parsley 1 clove garlic (or 1/4 tsp. garlic powder) 1/2 cup milk 2 eggs beaten 3/4 tsp salt (ok to omit as bread crumbs have salt) 1/8 tsp. black pepper *Mix all ingredients together by hand in a large mixing bowl. Shape into 1" balls. Bake in GLASS baking dish coated with olive oil. Bake at 350 degrees for 20 minutes and turn, bake for another 20 minutes and turn and finally 15 minutes. Ok to freeze for future use.

Ricotta Cheese - CLICK FOR FULL RECIPE!

Ricotta Cheese 4 cups milk (2% or whole) 2 tablespoons white vinegar 1/2 tsp. salt Add salt to milk in saucepan. Heat milk to 195 degrees. Stir continuously with whisk. Remove from heat and stir in vinegar. Stir in a "figure 8" pattern for 3-4 seconds. Let mixture sit for about 6 minutes. Carefully lable into mesh strainer Let ricotta drain for 20-45 minutes. The longer it drains the firmer it will be once chilled. Let ricotta cool to room temperature, place in bowl and refrigerate covered.
